This is a recipe you can easily modify to add or substitute any ingredient you may want in your cookies. The ingredient list is just a basic guide, but you can use whatever you can find in your kitchen.
The only reminder is, if you add more dry ingredients, you also have to increase the quantity of wet ingredients, and vice versa, so the cookies have the right consistency.
I made granola ginger cookies (a blend between oatmeal and gingerbread cookies) but you can change the recipe using, for example, dried fruit, chocolate chips, coconut flakes, nuts, other kinds of flour and spices.
1 cup granola
1/2 cup fine oatmeal
1/4 ground flax seeds
2 tbsp chia seeds
5 tbsp brown sugar
1 tbsp coconut oil
100mL soy milk
1 tbsp ginger powder
1 tsp cinnamon
Mix all the dry ingredients, then add the milk and melted coconut oil. Preheat the oven to 200C/390F. Grease a baking tray and make ball-shaped cookies with a spoon. Take it to the oven for 30 minutes.
