Piña colada balls/dessert


This is a pineapple and coconut dessert that can be served to be eaten with a spoon or in balls, for parties, for example.


1/2 pineapple

1/2 cup sugar

1 tbsp coconut oil

50g shredded coconut



Chop the pineapple into very small pieces and add to a pan with the sugar. Take it to the stove on low heat, stirring frequently. When it starts to boil, add the oil. Cook for approximately 10 minutes, until most of the liquid has evaporated (picture).


Remove from the heat and add the shredded coconut. If you are rolling it into balls, add the coconut slowly, until it reaches the right consistency. Don’t add too much shredded coconut otherwise it might get too dry to shape. Grease your hands, shape it into balls and cover them with more shredded coconut.
